Essential for use with sous vide core probe
Closed cell tape used in conjunction with an hypodermic temperature probe to measure the core temperature of sous vide food during the cooking process. Closed cell tape should be adhered to the outside of a clean, dry vacuum pouch. When the food is vacuum sealed in this pouch an hypodermic temperature probe can be inserted carefully through the closed cell tape into the core of the food to monitor the temperature during cooking. Only insert the probe once and leave it there for the duration of your temperature monitoring so as not to pierce the vacuum pouch more than once.
